Christmas in July Chai (Flash Chilled)

I absolutely love Saint Nick's Chai iced. Shhh! Don't tell Santa! I may like it better iced than hot.
I discovered this entirely by accident. I was wanting iced tea, but hadn't cold brewed anything. So I decided to flash chill something I wouldn't normally cold brew. And WOW! It turned out way better than I expected.
The Flash Chilled method of making iced tea quickly. This method is what is usually used in coffee shops and cafe's to make iced tea. The tea is brewed at 2 to 3x the suggested strength to ensure the flavor remains vibrant when diluted. The hot tea is then stirred or shaken (in cups or a cocktail shaker) in ice. Then poured over ice and served.
Ingredients
- 3 servings of Saint Nicks Chai (9g)
- 8 - 10 oz water heated to 200 F
- Simple Syrup
- Ice
Directions
- Prepare tea at triple strength. Place 9 grams of Saint Nicks Chai In a mug or single serve teapot. Heat water to 200 F and pour over tea. Steep 5 minutes.
- While tea is steeping, fill cocktail shaker with 1-2 cup of ice. Add 1-2 teaspoons of Simple Syrup. Also prepare the serving glass or tumbler by filling it with ice.
- When tea finishes steeping, strain it into the cocktail shaker. Immediately shake until ice is mostly melted.
- Pour contents of cocktail shaker into serving glasses, or tumbler.
Samantha's Tips
- I add 1 teaspoon of simple syrup to the cocktail shaker. More can always be added later.
- If you don't have a cocktail shaker you can use a large mason jar to flash chill the tea, or the stir method.
- This recipe yields about 16-20 ounces of tea. Technically that's 2-3 servings but I'm usually putting it in a tumber and drinking it all myself 🙂
